Engineered phytases for emerging biotechnological applications beyond animal feeding

In this mini review, emerging biotechnological applications for phytase use are described. Phytases are industrial enzymes mainly used in animal feeding, since they liberate free inorganic phosphate from phytate, the main phosphorus storage form in plants. These enzymes become more important in other areas like human nutrition, non-food industrial products and phosphate recovery from renewable resources. Recent phytase engineering campaigns are summarized and an overview about commercial phytase products is given in this mini review. Challenges of incomplete phytate hydrolysis, such as the chelating effects of intermediate products and their effects in application are also highlighted. In this way, protein engineering campaigns to tailor phytases for full phytate hydrolysis are suggested to overcome the limitations of an incomplete reaction.
